Three 25-year-old friends, $900 in their pockets, and a dream fueled by (as Jim Bitticks candidly puts it) "smoking a lot of weed." It's not your typical success story opening, but then again, Dave's Hot Chicken isn't your typical success story. Speaking at RestaurantSpaces, Bitticks, President & Chief Operating Officer of Dave's Hot Chicken, revealed how this unlikely beginning transformed into one of the fastest-growing restaurant chains.
That $900 investment turned into what QSR would later call one of 2022's Breakout Brands, and the fastest-growing restaurant chain of the year. But the beginning was humble: a portable fryer from Home Depot, ice chests full of chicken from Restaurant Depot, and an E-Z Up tent in a parking lot.
The first three nights they only made $40 per day. Then came what Bitticks describes as their "innovative marketing plan" – their secret weapon turned out to be remarkably simple. Armed with nothing but an Instagram account and relentless determination, co-founder Arman Oganesian began tagging food bloggers in every post.
The persistence paid off. On their third night, Eater LA's Farley Elliott showed up, drawn by those persistent tags. The next morning, his blog proclaimed "late night hot chicken stand might blow your mind." That night, the line stretched around the block – a hundred people waiting for chicken from a pop-up that had served just six customers the day before.
The brand's authenticity attracted an impressive roster of investors, including Drake (with his 150 million Instagram followers), Samuel L. Jackson, and Maria Shriver. But Bitticks emphasizes that celebrity backing was never about just names – it was about strategic growth.
The brand's evolution is just as compelling as its celebrity roster. Just imagine: they started with Styrofoam box tops as guest checks and a basic chalkboard menu. Now? They're pioneering AI systems and digital innovations that are transforming the fast-casual experience.
With 200 locations already serving up their signature hot chicken, and plans to reach 300 by early 2025, Dave's Hot Chicken isn't just growing – it's redefining what's possible in fast-casual dining. The brand is pushing boundaries beyond physical expansion, setting its sights on the Metaverse, where customers will be able to order real chicken from virtual spaces.
